Format math and units correctly in the docs

Particularly in this section of the docs but we should check the other sections too. We should format the LaTeX math to be rendered correctly by Sphinx. Additionally, for units only the standard abbreviated units should be used, Newton -> N, kilogram -> kg, etc.
